Romagna Albana Secco DOCG
“Pirona” means spinning top in Romagnolo dialect. The name comes from the resemblance between Georgian qvevri—the terracotta amphorae we use—and the traditional wooden toy. Both are unable to stand on their own: our qvevri are held upright by metal supports that let us move them around the cellar as needed.
The Wine
Pirona is made from Albana grapes harvested between late August and early September. The whole clusters go into the qvevri, where they ferment for 31 days. During this time, we limit ourselves to keeping the cap of skins clean without ever breaking it—and to listening to the sighs of fermentation with our ear pressed against the terracotta.
After 31 days, we rack without pressing the skins, and the wine moves to steel where it rests until late spring before bottling.
