Vermouth Bianco Dry
Vermouth is an aromatized fortified wine—a centuries-old tradition that begins with a base wine enhanced with carefully selected botanicals. Our interpretation draws deeply from our Italian heritage and, quite literally, from what grows wild in our vineyard.
The Story
One summer, looking for any excuse not to use the brush cutter, Marco started cataloging the wild herbs growing among the vines: artemisia, chamomile, mint, melissa, rosemary, sage, savory… The list kept growing, and so did an idea.
Meanwhile, in a forgotten corner of the cellar, a batch of Trebbiano was waiting. The 2019 vintage hadn’t fermented properly—too much residual sugar to bottle. It seemed destined for vinegar.
Then it clicked: behind the house was almost everything needed to make vermouth. One of Marco’s favorite drinks. The “autarchic” vermouth was born.

Tasting Notes
Pale gold with green reflections. The nose is a complex herbal bouquet: wormwood bitterness balanced by floral sweetness from elderflower and chamomile, with bright citrus notes cutting through. On the palate, dry and aromatic, with a long bitter-herbal finish.
How to Serve
- Straight: Chilled, with a twist of orange or lemon peel
- On the rocks: With a splash of soda
- In cocktails: Perfect for a Martini or Negroni Bianco
The Autarchic Philosophy
“Autarchico” means self-sufficient—and this vermouth is as local as it gets. The wine is ours, most botanicals come from our land, and the farthest ingredients traveled from southern Italy. A vermouth that couldn’t exist anywhere else.
